Convert HI-8 and MiniDV

I have about 20 Hi-8 and MiniDV tapes that I would like converted to DVD for ease of access and distribution. Each Tape should be copied to a DVD. Then create a lo-res or small screen version i.e. iPod Video size that should be small in size. The lo-res version should fit on very few DVDs, 1 if possible. 1 file per tape So the deliverable is 1 DVD per tape with the correct titles indicating content 1 DVD or more of all the tapes on one DVD in lo-res iPod size.
