Hi, I am a professional embedded systems engineer and I am working on a very similar chip to the STM32 (GD32E230) in my job, and I recently wrote a set of SPI drivers. I will be able to write another set of SPI drivers to professional standards for the STM 32. I am not exactly sure what you want with the ethernet protocol. The STM chips do not have an Ethernet peripheral usually. If you just want the data to end up in MATLAB, there are easier way to do that (UART). We will need to discuss detail further so I can get a good estimate of how hard this project will be
