Plan the website structure of new ecommerce website and setup the first part

I would like you to help with:
• Plan the website URL structure
• Plan how the website should be setup in Woocommerce, namely how to use category, subcategory and product for this type of platform.
• Create some democontent of categories, subcategories and products so I can continue to do the work myself.
I have attached 2 documents describing my thoughts.
I am not a developer and I am a novice to SEO. I can use wordpress (but not code).
I dont know if woocommerce can be used for this purpose - hopefully you will know and can help with it.
