Create an override for the Mail Alerts Prestashop module to send cerain emails elsewhere

The Mail Alerts module in Prestashop has functionality to send 'back in stock' email notifications to customers that subscribe to be notified on each product. I need a PHP override for the module that will send the 'back in stock' email to a specific email address instead of each customer that subscribed to be notified. - Must speak English - The customers that subscribed must still be written to the database - The notification must be sent once the stock is greater that zero and one or more customers have subscribed. - The email address must be easy to change in the code. - Must have the capability to send to multiple different email addresses at the same time. - It must compatible Prestashop 1.6 and 1.7.
