Completely Restore Unused Content in an Old Videogame (JetX2O)

I'm not here for a professional business, but for a project in which I cannot do on my own. My name is Peter, and as a kid, one of my favorite games of all time was JetX2O, a water racing game exclusive to the PlayStation 2. Upon playing the game for roughly 14 years, I have come to notice many differences in the game's development. The most important thing to me, however, was wanting to play the game with the originally designed characters. Through in-game footage, trailers, pictures, and even the actual content were I able to find early version materials of the character's costumes and game. I installed the game through a PS2 emulator and was able to access the game's files and through trial and error was I able to find what some of them were, including the character's costumes. While I was able to restore a bit on my own, there is a lot there still needs to be figured out, which for the most part involves coding and accessing an outdated model. With my current resources and lack of coding knowledge, I have little to no way of figuring this out on my own, but I feel that with a team will I be able to restore how this game used to be played, and eventually release it to the public as an updated re-release of the game on PC for old-time fans and everyone else alike. For information exclusive to the characters, each character has 2 models (a cinematic model and an in-game model). Each character has 4 costumes total, but their unused one is also located in that same file location. Simply changing the name of the files and replacing them worked for restoring the content of the cinematic character model, but not the in-game model, as that model is completely bugged. When looking at the individual file of the costume (obviously understanding which file is which), coding formats can either be the same or extremely different. However, coding of an in-game file should NOT be the same format as the coding for cinematic purposes. For this problem, in particular, not all are written as such but most characters in-game beta models do have a unique coding of their own that consisted of greater amounts of limbs. However, the problem is opening these files in a program that isn't Notepad. Note that the files for each character are known as GOB files, which are apparently present in only one other game made by LucasArts. With that being said, I would hope that professionals would have the correct software to open these files as necessary. To make things seem less complex, I have access to every file and can easily transfer them to anyone wishing to look at them. The game's file space is very little and it can be used from people who know this coding material best.
